On a typical shift you will rotate stock and follow FIFO on raw materials; proof and fry doughnuts, then glaze them; laminate puff and croissant dough by folding in the butter; knead and develop dough by hand and in the spiral mixer; check finished products for colour, crumb and weight; shape loaves, rolls, baguettes and buns by hand.
