Day-to-day duties: • Weigh and mix flour, yeast, water and salt to the day's recipe • Monitor oven temperature and baking time for each batch • Laminate puff and croissant dough by folding in the butter • Prove dough in the proofer at the right temperature and humidity Requirements: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills • Knowledge of dough fermentation and proving Freshers welcome — about 3 years of practice is enough.
