Great opportunity: we are hiring a meat trimmer in Johnson County, Texas. You will work in a hotel or restaurant butchery. You should have: • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler • Clean, presentable and friendly at the counter The role involves: • Keep halal cuts separated and clearly handled • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain 1+ years on the tools preferred.
