Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher You will debone shoulders, legs and loins with a boning knife; season and marinate meat on request; sharpen and hone knives on a steel and whetstone; keep HACCP hygiene records and sanitise the block and tools.
