What we are looking for: • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers The role involves dress the chilled counter and rotate stock by date; trim fat, sinew and silver skin off the cuts; keep halal cuts separated and clearly handled; debone shoulders, legs and loins with a boning knife; weigh, price and label cuts for the display case; run the band saw to cut cleanly through bone.
