What we are looking for: • Sound knowledge of HACCP and food safety standards • Able to stand for long shifts and work in heat Day to day you will chop, dice and portion vegetables, fish and meat; prepare the mise en place before each service; follow cleaning schedules and wash down work surfaces; prepare stocks, sauces and soups from scratch; marinate meats and prepare curries, gravies and bases; check deliveries and rotate stock using FIFO. 6+ years on the tools preferred.
