Vacancy available: we are hiring a confectioner in Bailey County, Texas. You will be based at a neighbourhood confectionery. Ideal candidate: • Understanding of food-safety and HACCP basics • Able to lift 25 kg flour sacks • Knowledge of dough fermentation and proving Your main tasks: • Knead and develop dough by hand and in the spiral mixer • Decorate cakes with icing, fondant and fresh cream • Rotate stock and follow FIFO on raw materials • Pipe and fill cakes, pastries and cream rolls • Monitor oven temperature and baking time for each batch • Score the top of loaves before baking Rotating shifts.
