Immediate opening: we are hiring a head butcher in Custer County, Oklahoma. You will be based at a busy retail butcher's shop. The role involves sharpen and hone knives on a steel and whetstone; take customer orders and advise on cuts and cooking; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case. You should have: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day • Food hygiene / HACCP certificate 6+ years on the tools preferred.
