You should have: • Comfortable working in cold rooms and chillers • Quick and accurate on the weighing scales and order maths • Knowledge of halal slaughter and handling where required On the job you will handle: • Take customer orders and advise on cuts and cooking • Keep HACCP hygiene records and sanitise the block and tools • Debone shoulders, legs and loins with a boning knife • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Trim fat, sinew and silver skin off the cuts 2+ years on the tools preferred.
