Day to day you will decorate cakes with icing, fondant and fresh cream; prove dough in the proofer at the right temperature and humidity; weigh and mix flour, yeast, water and salt to the day's recipe; keep work surfaces and equipment clean to food-safety standards; load and unload the deck oven with a peel; grease and clean baking trays, tins and moulds.
