The role involves: • Monitor chiller and freezer temperatures to keep the cold chain • Mince meat and prepare keema on the grinder • Trim fat, sinew and silver skin off the cuts • Break down beef, mutton and chicken carcasses into primal cuts • Weigh, price and label cuts for the display case Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler • 2+ years experience working as a butcher $5,000 per month, negotiable for the right hands.
