Great opportunity: we are hiring an oven operator in Stirling, Scotland. What we are looking for: • Knowledge of dough fermentation and proving • Able to work early-morning and night shifts Your main tasks: • Shape loaves, rolls, baguettes and buns by hand • Weigh and mix flour, yeast, water and salt to the day's recipe • Knead and develop dough by hand and in the spiral mixer • Prove dough in the proofer at the right temperature and humidity • Score the top of loaves before baking Rotating shifts.
