Requirements: • Comfortable working in cold rooms and chillers • Confident knife skills and safe blade handling The role involves stuff and link fresh sausages with casings; mince meat and prepare keema on the grinder; monitor chiller and freezer temperatures to keep the cold chain; keep halal cuts separated and clearly handled; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts.
