Retail butcher — Macon County

Immediate opening: we are hiring a retail butcher in Macon County, Illinois. You will work at a busy retail butcher's shop. Day-to-day duties: • Trim fat, sinew and silver skin off the cuts • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date • Keep HACCP hygiene records and sanitise the block and tools • Vacuum-pack and wrap customer orders • Sharpen and hone knives on a steel and whetstone Ideal candidate: • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers • Quick and accurate on the weighing scales and order maths Freshers welcome — about 1 years of practice is enough.
