Immediate opening: we are hiring a sausage maker in San Juan County, New Mexico. The job is in a hotel or restaurant butchery. What we are looking for: • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler • Food hygiene / HACCP certificate The role involves stuff and link fresh sausages with casings; portion steaks, chops and cutlets to the ordered weights; break down beef, mutton and chicken carcasses into primal cuts; season and marinate meat on request.
