You should have: • Able to stand for long hours in a hot kitchen • Familiar with deck, rack and convection ovens You will prove dough in the proofer at the right temperature and humidity; score the top of loaves before baking; roll out short-crust and biscuit dough; monitor oven temperature and baking time for each batch.
