Day-to-day duties: • Stuff and link fresh sausages with casings • Monitor chiller and freezer temperatures to keep the cold chain • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Run the band saw to cut cleanly through bone • Weigh, price and label cuts for the display case You should have: • Able to use a band saw, grinder and sausage filler • Clean, presentable and friendly at the counter • Physically fit to lift carcasses and stand all day Pay around $5,100 per month, based on your experience.
