You should have: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry You will break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; keep halal cuts separated and clearly handled; monitor chiller and freezer temperatures to keep the cold chain; portion steaks, chops and cutlets to the ordered weights.
