Ideal candidate: • Food hygiene / HACCP certificate • 2+ years experience working as a butcher Day to day you will stuff and link fresh sausages with casings; vacuum-pack and wrap customer orders; keep halal cuts separated and clearly handled; break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools.
