Butcher — Franklin County

Immediate opening: we are hiring a butcher in Franklin County, Vermont. Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Stuff and link fresh sausages with casings • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Debone shoulders, legs and loins with a boning knife Requirements: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry Pay around $220 per day, based on your experience.
