Now hiring: we are hiring a deboner in Orange County, California. You will be based at a wholesale meat market. You will sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone; debone shoulders, legs and loins with a boning knife; season and marinate meat on request; dress the chilled counter and rotate stock by date; vacuum-pack and wrap customer orders. Ideal candidate: • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler Freshers welcome — about 4 years of practice is enough.
