Ideal candidate: • Knowledge of dough fermentation and proving • Able to stand for long hours in a hot kitchen You will score the top of loaves before baking; proof and fry doughnuts, then glaze them; weigh and mix flour, yeast, water and salt to the day's recipe; roll out short-crust and biscuit dough; boil sugar syrup for glazes and icing.
