We are recruiting: we are hiring a retail butcher in Bureau County, Illinois. The role involves: • Keep HACCP hygiene records and sanitise the block and tools • Debone shoulders, legs and loins with a boning knife • Take customer orders and advise on cuts and cooking • Run the band saw to cut cleanly through bone • Stuff and link fresh sausages with casings • Portion steaks, chops and cutlets to the ordered weights Requirements: • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths • 2+ years experience working as a butcher Freshers welcome — about 3 years of practice is enough.
