Requirements: • Quick and accurate on the weighing scales and order maths • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry On a typical shift you will sharpen and hone knives on a steel and whetstone; dress the chilled counter and rotate stock by date; debone shoulders, legs and loins with a boning knife; take customer orders and advise on cuts and cooking; weigh, price and label cuts for the display case.
