On the job you will handle: • Knead and develop dough by hand and in the spiral mixer • Laminate puff and croissant dough by folding in the butter • Check finished products for colour, crumb and weight • Shape loaves, rolls, baguettes and buns by hand • Pipe and fill cakes, pastries and cream rolls You should have: • Able to stand for long hours in a hot kitchen • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens At least 1 year(s) in a similar role.
