Halal butcher — Livingston County

We are recruiting: we are hiring a halal butcher in Livingston County, Kentucky. You will be based at a busy retail butcher's shop. The role involves: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools • Portion steaks, chops and cutlets to the ordered weights • Take customer orders and advise on cuts and cooking Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler 3+ years on the tools preferred.
