Ideal candidate: • Understanding of food-safety and HACCP basics • Knowledge of dough fermentation and proving Day-to-day duties: • Load and unload the deck oven with a peel • Pipe and fill cakes, pastries and cream rolls • Check finished products for colour, crumb and weight • Monitor oven temperature and baking time for each batch • Shape loaves, rolls, baguettes and buns by hand • Proof and fry doughnuts, then glaze them $160 per day, negotiable for the right hands.
