Meat cutter — Wiltshire

Urgent requirement: we are hiring a meat cutter in Wiltshire, England. You will work in a hotel or restaurant butchery. What we are looking for: • Knowledge of halal slaughter and handling where required • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher Day-to-day duties: • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Weigh, price and label cuts for the display case • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date • Mince meat and prepare keema on the grinder Freshers welcome — about 5 years of practice is enough.
