What we are looking for: • Able to stand for long hours in a hot kitchen • Knowledge of dough fermentation and proving The role involves keep work surfaces and equipment clean to food-safety standards; pipe and fill cakes, pastries and cream rolls; boil sugar syrup for glazes and icing; grease and clean baking trays, tins and moulds; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter.
