Day-to-day duties: • Keep HACCP hygiene records and sanitise the block and tools • Keep halal cuts separated and clearly handled • Dress the chilled counter and rotate stock by date • Sharpen and hone knives on a steel and whetstone • Monitor chiller and freezer temperatures to keep the cold chain • Take customer orders and advise on cuts and cooking Ideal candidate: • Confident knife skills and safe blade handling • 2+ years experience working as a butcher • Quick and accurate on the weighing scales and order maths Freshers welcome — about 4 years of practice is enough.
