Head butcher — Valley County

We are recruiting: we are hiring a head butcher in Valley County, Idaho. You will work in a hotel or restaurant butchery. Requirements: • Comfortable working in cold rooms and chillers • Confident knife skills and safe blade handling • Food hygiene / HACCP certificate The role involves trim fat, sinew and silver skin off the cuts; take customer orders and advise on cuts and cooking; keep halal cuts separated and clearly handled; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone.
