Ideal candidate: • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day You will sharpen and hone knives on a steel and whetstone; trim fat, sinew and silver skin off the cuts; weigh, price and label cuts for the display case; dress the chilled counter and rotate stock by date; stuff and link fresh sausages with casings.
