You should have: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes On a typical shift you will laminate puff and croissant dough by folding in the butter; shape loaves, rolls, baguettes and buns by hand; load and unload the deck oven with a peel; prove dough in the proofer at the right temperature and humidity.
