Now hiring: we are hiring a meat trimmer in Suffolk County, Massachusetts. You will be based in a hotel or restaurant butchery. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate You will break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts; mince meat and prepare keema on the grinder; sharpen and hone knives on a steel and whetstone. Freshers welcome — about 6 years of practice is enough. $5,200 per month, negotiable for the right hands. Performance bonus on top of base pay. Full-time with occasional weekends.
