You should have: • Food hygiene / HACCP certificate • Confident knife skills and safe blade handling On the job you will handle: • Monitor chiller and freezer temperatures to keep the cold chain • Debone shoulders, legs and loins with a boning knife • Keep HACCP hygiene records and sanitise the block and tools • Take customer orders and advise on cuts and cooking • Keep halal cuts separated and clearly handled Freshers welcome — about 3 years of practice is enough. $3,600 per month, negotiable for the right hands.
