Ideal candidate: • Comfortable working in cold rooms and chillers • 2+ years experience working as a butcher The role involves: • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain • Run the band saw to cut cleanly through bone • Sharpen and hone knives on a steel and whetstone 3+ years on the tools preferred.
