You should have: • Food hygiene / HACCP certificate • Clean, presentable and friendly at the counter The role involves: • Mince meat and prepare keema on the grinder • Debone shoulders, legs and loins with a boning knife • Monitor chiller and freezer temperatures to keep the cold chain • Run the band saw to cut cleanly through bone • Portion steaks, chops and cutlets to the ordered weights • Keep HACCP hygiene records and sanitise the block and tools Freshers welcome — about 2 years of practice is enough.
