Requirements: • Accurate at weighing and following recipes • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens Day-to-day duties: • Pipe and fill cakes, pastries and cream rolls • Laminate puff and croissant dough by folding in the butter • Check finished products for colour, crumb and weight • Prove dough in the proofer at the right temperature and humidity • Rotate stock and follow FIFO on raw materials • Score the top of loaves before baking At least 1 year(s) in a similar role.
