Requirements: • 2+ years' experience as a baker • Accurate at weighing and following recipes • Familiar with deck, rack and convection ovens Day-to-day duties: • Proof and fry doughnuts, then glaze them • Weigh and mix flour, yeast, water and salt to the day's recipe • Check finished products for colour, crumb and weight • Shape loaves, rolls, baguettes and buns by hand • Knead and develop dough by hand and in the spiral mixer • Score the top of loaves before baking Freshers welcome — about 1 years of practice is enough.
