Requirements: • Food hygiene / HACCP certificate • Quick and accurate on the weighing scales and order maths Day-to-day duties: • Trim fat, sinew and silver skin off the cuts • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain Freshers welcome — about 2 years of practice is enough.
