Requirements: • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher The role involves: • Vacuum-pack and wrap customer orders • Stuff and link fresh sausages with casings • Trim fat, sinew and silver skin off the cuts • Mince meat and prepare keema on the grinder • Dress the chilled counter and rotate stock by date • Break down beef, mutton and chicken carcasses into primal cuts Six days a week, one day off.
