Great opportunity: we are hiring an abattoir worker in Cibola County, New Mexico. The job is in a hotel or restaurant butchery. Ideal candidate: • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling The role involves: • Vacuum-pack and wrap customer orders • Dress the chilled counter and rotate stock by date • Debone shoulders, legs and loins with a boning knife • Trim fat, sinew and silver skin off the cuts • Portion steaks, chops and cutlets to the ordered weights • Monitor chiller and freezer temperatures to keep the cold chain Meals and transport allowance provided.
