The role involves: • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date • Stuff and link fresh sausages with casings • Weigh, price and label cuts for the display case • Trim fat, sinew and silver skin off the cuts • Run the band saw to cut cleanly through bone You should have: • Knowledge of halal slaughter and handling where required • Comfortable working in cold rooms and chillers 4+ years on the tools preferred.
