You should have: • Confident knife skills and safe blade handling • Able to use a band saw, grinder and sausage filler You will mince meat and prepare keema on the grinder; keep HACCP hygiene records and sanitise the block and tools; weigh, price and label cuts for the display case; portion steaks, chops and cutlets to the ordered weights.
