Great opportunity: we are hiring a head baker in Poinsett County, Arkansas. You will be based at a neighbourhood confectionery. You should have: • Knowledge of dough fermentation and proving • Basic cake decorating and piping skills • 2+ years' experience as a baker You will weigh and mix flour, yeast, water and salt to the day's recipe; monitor oven temperature and baking time for each batch; boil sugar syrup for glazes and icing; load and unload the deck oven with a peel; grease and clean baking trays, tins and moulds; laminate puff and croissant dough by folding in the butter.
