On a typical shift you will check fryer oil and change it when it breaks down; manage the tandoor and skewer kebabs; label and date all prepped ingredients in the walk-in; follow standardised recipes and stick to portion sizes; prepare the mise en place before each service; follow cleaning schedules and wash down work surfaces.
