Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Sharpen and hone knives on a steel and whetstone • Vacuum-pack and wrap customer orders Ideal candidate: • Confident knife skills and safe blade handling • Comfortable working in cold rooms and chillers Freshers welcome — about 5 years of practice is enough. $3,900 per month, negotiable for the right hands.
