Your main tasks: • Season and marinate meat on request • Trim fat, sinew and silver skin off the cuts • Debone shoulders, legs and loins with a boning knife • Keep halal cuts separated and clearly handled • Mince meat and prepare keema on the grinder • Break down beef, mutton and chicken carcasses into primal cuts You should have: • Able to use a band saw, grinder and sausage filler • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry At least 2 year(s) in a similar role.
