The role involves stuff and link fresh sausages with casings; debone shoulders, legs and loins with a boning knife; take customer orders and advise on cuts and cooking; trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; dress the chilled counter and rotate stock by date.
