Immediate opening: we are hiring a counter butcher in Spencer County, Kentucky. Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Dress the chilled counter and rotate stock by date • Portion steaks, chops and cutlets to the ordered weights • Take customer orders and advise on cuts and cooking Ideal candidate: • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day Meals and transport allowance provided.
